Double-Chocolate Banana Bread

This comes from Cooking Pleasures magazine, and is my current favorite way to use up overripe bananas.  The recipe is for 1 loaf, I usually double it.

  • 1 cup sugar
  • 2 eggs
  • 1/3 cup veg oil
  • 3 ripe mashed bananas
  • 1 tsp vanilla
  • 1 1/2 cup AP flour
  • 1/2 cup unsweetened cocoa
  • 1 tsp baking soda
  • 1 cup chocolate chips

Preheat oven to 350F.  Prepare a loaf pan (or muffin tins, if you prefer).

In your stand mixer, beat together the sugar, eggs, and oil until well mixed.  Add banana and vanilla, beat at low speed.

Combine flour, cocoa, and baking soda in a separate bowl, whisk to combine.  Add to banana mixture, beat at low speed until just combined.  Add chips, beat at low speed until just evenly distributed.  (Quick breads are like muffins – you don’t want to overwork the batter.)

Spoon into your loaf pan and bake about an hour or until a knife comes out clean.  Cool 10 minutes in pan and then completely on a wire rack.

    I make a similar recipe that also has a cup of oats in it – gives it a nice texture. I got it from the Quaker web site.
